Shrimp Stacked Nachos

Description

Hungry time! Spicy cajun shrimp stacked nachos for the win. Bring on the heat, Kansas City!

Ingredients

  • 1 lb. peeled medium raw shrimp
  • 1.5 tablespoons cajun seasoning
  • 2 tablespoons cooking oil
  • 1 1/2 cups shredded montery jack cheese
  • 1 small can green chilies
  • 1 jar salsa
  • Cilantro for garnish

Instructions

Preheat the oven to 400 degrees F.

Heat that iron skillet with 2 tablespoons cooking oil over medium heat.

Place cleaned and dried shrimp in a plastic gallon size bag with cajun seasoning and shake to coat shrimp.

Add shrimp to skillet and cook for one minute each side. Only cook two minutes, or you will have rubbery shrimp. No one likes that!

Remove shrimp temporarily to another dish. 

Wipe the iron skillet out with a dry paper towel to remove extra oil. Now add to the skillet layers of chips, cheese, couple tablespoons salsa, and repeat another layer. Add spiced cajun shrimp on top and bake for 10 minutes till the cheese has melted.

Garnish with cilantro and a few more spoonfuls of salsa. Serve to your hungry crew.
