Snow Day Salad

Mother nature may still be brrrr-ing on the white stuff, but I decided its high time for some sunshine. It’s that favored time of year when blood oranges make its way to the Midwestern produce shelves that I wanted to share this little ray of sunshine salad with Y’all.



  • 2 blood oranges, segmented and sliced
  • 1 navel orange, segmented and sliced
  • 2 plums, sliced
  • 1/2 cup blueberries
  • 1/2 cup blackberries
  • 1/4 cup raw honey
  • 1 key lime, zested and juiced
  • 2 tablespoons lemon juice
  • mint for garnish



Line up your stars: two blood oranges, and one navel orange onto a cutting board. Now we are going to get fancy and make orange supremes. Orange slices without membrane or pith. Begin with slicing off the top and bottom of the citrus fruit. With the flat cut side on the cutting board, take a pairing knife and slowly cut from the top cut side along the outer side of citrus. You want to stay just at the outer edge of the flesh of the fruit. Continue this method all around till membrane is removed. Then flip the fruit on the side and slice into 1.4-inch slices. Using a sharp knife is important when slicing, so you don’t squish the pretty citrus. Mound and set your slices aside onto a rimmed platter or bowl.

Slice plums and add to the oranges. Yes, get fancy and fan them out. I know, I know. 

Toss on the berries, and now we are going to make this simple key lime honey dressing. It is the bomb.

In a small mixing bowl add 1/4 cup raw honey or regular if you have it. Add the zest of the key lime to the honey by using a microplane grater. Cut key lime in half and squeeze juice to the mixture. Add two tablespoons of lemon juice and stir till combined.

Pour dressing over salad and let it sit to get the juices flowing. Garnish with mint and enjoy!
