I’ve been playing in the garden and finally, just when I think all is good, I get bitten. Or something- maybe it was a funky lake water bacteria, or an allergic reaction. Thank goodness not shingles, but now I’m itchy and pis**y that my summer might be over before it even began. At least I’ve got a 12 day dose of prednisone to make me a high functioning, non-sleeping deep house cleaning dynamo, although I’ll have to rely on my peeps to keep my outside green babies alive and pest free.
Now that I’m walking the line of oversharing, my hubs politely points out the not so great effects of prednisone. The make you puffy kind. Like no more dole whip runs to the Pink Cone ice cream shop for you, lady. Geeeeezzzz, give it to me hardcore man! But I reluctantly take his bad news (with a grain of salt) as I read my prescription fact sheet. Says here you might have a loss of appetite. Hmmm. Day 1, not really hungry because I’ve had so much energy to tackle the four things I’ve avoided in my house the last two months. Even cleaned dust bunnies on a baseboard, what’s happening to me? That’s it, folks, I need to pause, reset my priorities and actually cook again.
In my last post, I kept true to my word on mostly focusing on the garden. I have cooked some but mostly family mainstays, nothing too far out of the box. I have done a few runs to the grocery store, but we are trying out online shopping, which has had some pros and cons. Hence, only two bananas instead of two pounds (we really like bananas) and 6 ears of corn at $1 each (which I thought a bargain) but come to find out we got 6 packages of five was the really the bargain.
So now I need to watch my carbs for my ”healing days,” and close my eyes when I drive by the Pink Cone, I figured out what can I do but puree a little summer for myself.
Meet my little pink flamingo. It’s perched pretty in my happy vintage ware. Makes me smile, even though I can’t sip by the pool I can still have my fun, too.

Yield 8 servings
- 4 cups cubed frozen watermelon
- juice from one lime
- 10 mint leaves
- 3 tablespoons honey
- 1/2 cup water
Cut and cube watermelon, freeze overnight. Place frozen watermelon and rest of ingredients in blender or food processor and blend until super smooth.
Freeze in a glass dish to reblend later or go ahead and scoop yourself some sweet summer sunshine and enjoy! For a tipsy flamingo, just float a jig of you fav vodka, rum, or tequila on top.
