Mini Melts and Thousand Island Slaw

In deconstructing the Reuben and seeing its multiple transformations found around the local eateries we challenged our inner Irish to come up with a trifecta of taste bud temptations.

Mini Melts and Thousand Island Slaw

Description

Some like sauerkraut and some don’t. This Mini Melt is all about meat and cheese. Griddle up with a side of thousand island slaw and call it good.


Scale

Ingredients

  • mini rye cocktail sliced bread
  • cream cheese
  • 1 pound sliced cooked corned beef
  • cooking spray

Slaw:

  • bag of pre-made coleslaw
  • 2 tablespoons white vinegar
  • 3 tablespoons thousand island dressing
  • 1/4 tsp. salt

Instructions

Mini Melts w/Thousand Island Slaw

Some like sauerkraut and some don’t. This one is all about the meat and cheese. Griddle up with a side of thousand island slaw and call it good.

Spread the cream cheese on both sides of the sandwich bread. Place meat in between. Repeat making the desired amount of cocktail sandwiches needed.

Heat a panini grill or cast iron griddle. Spray both sides of sandwiches and place on heat. Grill till golden and cheese is melted.

The slaw basics: mix ingredients in a bowl and refrigerate. It’s that simple.

Serve immediately.
