I know, I know we must we must have the turkey or bust. And don’t you worry we will. But in lew of some turkey recall, one might consider flying the coop on this holiday for turkeys cousin– chicken.
Something about smothered apple butter roasted chicken makes me go, what just happened here? Did I find an easy every month rotation dinner? Well, hell yeah!!
If you must keep with tradition or if your kind of like hmmm turkey recall for salmonella something don’t hesitate on this dish.
Apple Butter Glazed Chicken
Yield 6 servings
Ingredients
- 5 lb chicken
- 3/4 cup apple butter, homemade recipe
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 teaspoon crushed red pepper flakes
- 1 bunch thyme sprigs
- 1 quartered apple
- 3 garlic cloves, smashed
- kosher salt and pepper
Instructions
Preheat oven to 375 degrees Fahrenheit
Pat chicken dry and Remove innards. Place chicken in a roasting pan.
Combine spice with Midwest and Grassfed homemade apple butter or store bought if you must.
Slather spiced apple butter all over the bird and under the skin. Season with salt and pepper and stuff thyme sprigs, apple and garlic inside the bird.
Roast chicken for 2o minutes per pound or until meat thermometer reaches 165 degrees. I like to ladle the juices a few times over the bird during the cooking time to keep moist. Don't let the chicken brown too quickly. Prevent by tenting with aluminum foil.
When chicken is done, and the temperature reads 165 degrees remove from oven and leave foil tented while resting for 10 minutes before carving.
